Delicata Squash

 Storage Tips

  • Delicata squash stores best between 50-70 degrees, in a dry, dark space, but does not store well long term so we recommend eating right away. If storing for a short amount of time, try to store in a place with very consistent temperatures such as a root cellar, pantry, or garage.

Culinary Tips

  • Delicata squash has very thin, delicate skin which does not need to be peeled, and can be eaten with the flesh of the squash.

  • To prepare, cut off ends with very sharp chef’s knife and then cut lengthwise. Scoop out seeds with spoon. We like to cut 1 1/2” slices of squash, toss in oil, rosemary and coarse salt and lay on a baking sheet. Roast in a 400 degree oven without stirring until the cut side it deep golden brown and the flesh is fork tender. You can mix these roasted squash slices into salads, or serve as a side dish to any meal.
